Happy Friday… and what better way to celebrate than with a (dredged-up from way back in the winter) bento!
Apparently I was feeling the earth tones when I put this box together. What does it consists of? The top tier held the (chocolate-chip) olive oil cake which basically made up my breakfast that day. (Don’t judge. On a late start day, getting Starfish out the door in time to catch my bus usually means a crappy or nonexistent breakfast for me.)
The soup is a Thai-spiced sweet potato and butternut squash, which was basically my way of trying to rescue a too-spicy Thai curry base previously banished to the freezer*. Pretty amazing what adding some extra sweet potatoes and veg can fix! The third tier is pork mixed in with aloo gobi (made with a mix of cauliflower and cabbage — surprisingly tasty!).
* I’ve been on a freezer-clearing kick this past couple months; The Boy has been warned that there is a strict No Meat Buying rule in effect, at least until we eat our way through the (copious) amounts we currently have squirreled away. It’s both horrifying and blissfully liberating to see what I have stashed in there… and then eating it. I’ve been steadily working away at our freezer contents, and feel I’m making some good headway!
