…that actually happened on a Friday! This was today’s lunch*. Looking in the fridge this morning, I noticed quite a number of not-quite-enough-for-a-meal leftovers, so I decided to round them up into a lunch.
* I was feeling snackety when I got to work, and forgot to take a picture before digging in. So if you imagine sliced strawberries (with a bit of balsamic) hanging out in that empty compartment next to the grapefruit, that’s what was going on there.
The soup was a broccoli potato from earlier this week, and the rice was one of many (many, many) veggie-fried rice offerings. Starfish seems to follow in her mom’s footsteps in displaying an enthusiastic eater’s love of starchy foods… but is a little less embracing of the veggies at the moment. Unless of course, they are tucked into fried rice (see also: starch lover). I’d been making fried rice roughly once a week pre-Starfish anyway (it’s a convenient way to use up fridge stragglers) but… I’m not going to state how often I make it now.
