This was yesterday’s lunch, and an attempt for me to cram all of my at-work food (except for my morning staple yoghourt+granola; it just wouldn’t fit) into a single container. I have to say, it worked out quite nicely! As an aside, it seems that the colder weather is making me crave a mid-afternoon starchy snack though because while having all the fruit is really nice (vanilla persimmons — sweet, yet winter-spiced! who knew?) I definitely spent a few minutes wistfully thinking of cookies and muffins in the post-lunch dip. I had packed in the dried apricots as a last-minute attempt to give myself something “dry” and sweet to munch on, but apparently I didn’t hit the mark there. I’ll figure out how to strike that balance one day!
For the lunch itself, I had tragic soy-marinated pork*, broccoli kinpira (still haven’t learned my lesson; it was still too peppery), coconut milk carrot and napa cabbage, and rice with curried cashew furikake. All in all, a good balance. I was worried halfway through the meal that I had packed too much, but no, the meal size was pretty much perfect. (If I had packed myself a baked good I wonder if I would feel that way? Hmm.)
* About that pork. I had created the marinade on Monday night, intending to cook it Tuesday night or Wednesday morning. There were… delays, and Oh. My Poor Tongue. I like soy sauce, but three days is really way too long for some poor innocent meat to be languishing in it. So salty. Yikes. I was incredibly grateful for all the fruit to help rescue my mouth afterwards, let me tell you.
